Make the crowdie according to the instructions in the reel on your profile page.
Loosen about 3 tbsp of the crowdie with 1-2 tbsp of mascarpone, then grate over a heaped tbsp of Parmesan. Mix well and dot over the pizza base.
Cut one salmon fillet into 3 slices about 5mm thick and lay over the crowdie base. Drizzle with leek oil and grind black pepper over the top.
Julienne the peeled potato, rinse in cold water, dry, and fry in oil heated to 160°C until golden and crispy.
Toss the crispy potato sticks with a salt and vinegar powder (or regular salt and a dash of vinegar), chopped parsley, a teaspoon of small capers, and a quarter of a sliced red onion.
Dot spoonfuls of salmon caviar over the pizza, add a squeeze of lemon juice, and sprinkle the crispy spice bag over the top.
