Marinate 2 chicken thighs for 20 minutes in 2 cups water mixed with 1 Tbsp salt
Preheat a toaster oven or regular oven to 250°F/120°C
Heat 1 qt neutral oil to 400°F/200°C in a deep and heavy pan or wok
In a shallow bowl, combine 1 tsp paprika, 1 tsp garlic powder, and 1 tsp cayenne with 1 cup flour
Coat the chicken completely in the flour mix, pressing it into all nooks and crannies
Let the chicken sit in the dry mix until the hot oil is ready
Gently place the floured chicken into the hot oil and cook until fully golden brown
Place the cooked chicken on a rack and heat in the oven until internal temperature reaches 180°F/82°C
Add 2 spoonfuls of hot frying oil to the brown sugar and remaining 1 tsp paprika, 1 tsp garlic powder, and 2 tsp cayenne (add extra red pepper flakes if desired)
Sprinkle salt on the chicken, coat with sauce, and assemble on brioche buns
