Boil chicken with onion, garlic, and A Toda Madre seasoning.
Blend tomatillos, serranos, cilantro, sour cream, bouillon, and water until smooth.
Shred chicken, season again (don’t be shy).
Lightly fry tortillas, dip in green sauce, stuff with chicken, and roll.
Add more sauce on top, mozzarella, and bake at 400°F until cheesy and bubbly.
