Line a half-sheet pan with parchment paper.
Sprinkle mozzarella into a thin circle about the size of a large burrito tortilla.
Add a light sprinkle of Parmesan cheese.
Layer pepperoni over the top.
Bake at 350°F for 8 minutes, then check every 2 minutes until lightly browned and crispy around the edges.
Let cool for 2–3 minutes.
Carefully transfer to a plate and fold in half while still warm so it cools into a tortilla shape.
Fill with Caesar salad and enjoy!
