Step 1: Prepare the Simple Syrup. In a medium saucepan, combine the sugar and water over medium heat. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 5 minutes. Remove from heat, stir in the fresh lemon juice, and set aside to cool completely.
Step 2: Prepare the Cheese Filling. In a mixing bowl, combine the ricotta cheese, heavy whipping cream, and sugar. Mix until smooth and creamy. Set aside.
Step 3: Prepare the Kunafa Dough. Preheat the oven to 325°F. Cut the kunafa dough into smaller strands or pieces. Place it into a large bowl and drizzle the melted ghee or butter over the dough. Using your hands, gently mix until all of the dough is evenly coated.
Step 4: Assemble the Osmalieh. Lightly grease the bottom of a baking tray or 9x13-inch baking dish with a small amount of ghee or butter. Spread half of the kunafa dough evenly into the bottom of the tray. Press it down firmly to create an even layer. Spread the ricotta cheese mixture evenly over the kunafa layer. Top with the remaining kunafa dough, gently covering the filling completely.
Step 5: Bake. Place the tray into the oven and bake for 35–50 minutes, or until the top is golden brown and crispy.
Step 6: Add the Syrup. Remove the Osmalieh from the oven and immediately pour the cooled simple syrup evenly over the top. Garnish with crushed pistachios. Serve warm or at room temperature and enjoy.
