How To Make Homemade Ketchup (from Fresh Tomatoes)
  1. Remove cores and seeds of your tomatoes. You need 5lbs after removing.

  2. Place tomatoes in a large pot. Add onion and garlic

  3. Simmer for 1 hour, stirring occasionally

  4. Drain as much liquid as possible, and puree the tomatoes, onion, and garlic using a high speed blender (or stainer/food mill)

  5. Pour the ketchup back into the large pot and add the rest of the ingredients (vinegar, sugar, spices)

  6. Bring to a boil then reduce heat and simmer, stirring occasionally for about 3 hours, or until the desired thickness is reached.

  7. Puree the ketchup in a high speed blender, on it's highest speed until very smooth.

  8. Pour into half-pint or pint sized jars.

  9. Wipe the rims clean and place on lids and rings

  10. Process in a boiling water bath canner for 15 minutes.
