Creamy Green Linguine
  1. Add linguine to a pan of boiling water and cook for 7-8 minutes

  2. Meanwhile, in a bowl combine the egg, pecorino and a big pinch of black pepper and whisk together with a fork

  3. Chop broccoli into small florets and after 7-8 minutes add it to the pasta along with the spinach

  4. Cook for 2 more minutes then drain, reserving some pasta water

  5. Add a splash of pasta water to the egg mixture and stir

  6. Pop the pasta and greens back in the pan off the heat and add in the egg mixture

  7. Toss everything together until combined

  8. Put the pan back on medium heat and stir for a couple more minutes until the sauce is glossy and coats the pasta nicely (add more pasta water if needed)

  9. Finish with lemon juice and chilli, and season to taste

  10. Serve with plenty more pecorino
