Cook udon noodles with the bok choy to blanch. Drain, reserving some noodle water, and rinse with cold water to stop the cooking.
Press and crumble the tofu, then toss with five spice, garlic powder, and cornstarch.
Heat oil in a pan over medium and cook tofu 5–6 minutes until starting to crisp.
Add 1 tbsp Nutiva Garlic Coconut Aminos and stir to coat; remove from the pan.
In the same pan, add oil, garlic, ginger, scallion whites, and gochugaru. Sauté 1 minute until fragrant.
Lower the heat and add garlic coconut aminos, chili oil, sesame oil, maple syrup, and rice vinegar.
Add the noodles and bok choy; toss to coat.
Stir in lime juice and peanut butter loosened with noodle water.
Serve topped with crispy tofu, scallion greens, and a drizzle of chili oil and Nutiva garlic coconut aminos.
