High-protein Maple Pumpkin Cheesecake
  1. Preheat oven to 325°F (163°C). Grease and line a 7-inch springform pan.

  2. Mix the oats, oat flour, coconut oil, maple syrup, and salt until the mixture resembles wet sand. Press firmly into the bottom of the pan.

  3. Bake the crust for 10 minutes and allow it to cool slightly.

  4. Blend the cottage cheese until completely smooth.

  5. Add the pumpkin, eggs, protein powder, maple syrup, vanilla, pumpkin pie spice, and cornstarch. Blend until silky.

  6. Pour the filling over the crust.

  7. Bake for 50–60 minutes, until the edges are set and the center still has a slight jiggle.

  8. Turn the oven off, crack the door, and let the cheesecake sit for 20 minutes.

  9. Cool completely, then refrigerate overnight before slicing.

  10. Mix together optional topping ingredients: ½ cup nonfat Greek yogurt, 1 tablespoon maple syrup, A sprinkle of pumpkin pie spice.

  11. Spread over each slice before serving and garnish with a light dusting of cinnamon.
