Leftover Milk, Herb & Spring Onion Soda Bread
  1. Heat oven to 200C/180C fan/gas 6.

  2. Combine the milk and lemon juice in a jug and set it aside for 10 mins until the milk starts to curdle.

  3. Tip the flour into a bowl, and add the spring onions, herbs, bicarbonate of soda and grated cheese along with 1 ½ tsp salt.

  4. Pour the curdled milk into the bowl and using a wooden spoon, bring it together.

  5. Lightly flour a clean worktop and tip the dough out. Knead lightly to just bring it together into a ball.

  6. Dust a baking tray with flour and add the dough. Slash a cross on top and bake for 35-40 mins until golden brown and the loaf sounds hollow when the bottom is tapped.

  7. Serve the soda bread, still warm, cut into thick slices with some salted butter.
