Chop your dates and heat a pan on medium-low heat, add the butter to your pan and let your dates cook for 3-5 minutes, stirring constantly to ensure they don't burn
Transfer your dates and butter to a separate bowl and let cool completely
In a mixing bowl add all your wet ingredients and mix until combined
Add your almond flour and mix until a cookie dough is formed
Cover your dough and let it chill in the fridge for 45 minutes
Line a baking tray with parchment paper
Once your dough has chilled, form the cookies (about 2 tablespoons of dough each) and add your favorite toppings and/or nut butters
Transfer formed cookies to the freezer for 15 minutes
Preheat your oven to 350°F
Bake for 10-12 minutes, keeping an eye on your oven
Let your cookies fully cool for at least 30 minutes before serving
