Bolognese / Ragu
  1. Dice onion, carrot and celery. Add to a pot with a splash of oil, salt and pepper and fry off until nice and soft, approximately 7 minutes.

  2. Add the mince and some more salt and pepper. Cook until brown on all sides and all the liquid has evaporated, approximately 20 minutes, until it starts to sizzle and caramelize.

  3. Add tomato paste and fry off for a few minutes.

  4. Cover everything with water and add more salt and pepper.

  5. Cover with a lid and simmer on low for at least 2 hours.
