Ingredients:
Dice the onion, garlic, and ginger and fry on a low heat for 5 minutes
Separately fry your seeds for 2 minutes
Mix together with your dry spices
Wash and add your lentils
Mix together and infuse on a medium heat for 3 minutes.
Chop and add your fresh tomatoes, and add enough boiling water to cover them
Add 1 tin of coconut milk
Leave to simmer for about 25 minutes, adding a little more water if it starts to dry out
Top with fresh coriander
