Preheat oven to 450°F degrees
Toss sweet potatoes in olive oil, add salt, and bake until softened
Cook quinoa in a saucepan and prepare salad dressing
Mix dressing ingredients in a bowl
Toss veggies, leafy greens, berries, seeds & nuts together in a large bowl, add dressing
Add sweet potato and quinoa to the bowl and mix all ingredients
Preheat oven to 450°F degrees

Toss Brussels sprouts with seasonings and olive oil, roast until softened
Marinate salmon, then add to baking tray and roast
Sauté kale in olive oil
Serve greens followed by sweet potato, Brussels sprouts, then salmon, dress in lemon juice
Blend all smoothie ingredients until smooth
