In your serving bowl, combine peanut butter, gochujang, soy sauce, sugar, hot water, chili garlic crisp, garlic and rice vinegar. Set aside.
Make the cucumber by using a Julienne peeler or a vegetable spiral slicer. Add the Cucumber to the peanut dressing and add sesame oil, stir to coat the noodles and top with green onion and toasted sesame seeds. Devour!
