Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes and sausage.
In a large bowl, toss the baby potatoes with olive oil, halal ranch seasoning, garlic powder, onion powder, and black pepper until they are evenly coated.
Slice the halal smoked sausage into bite-size pieces and add them to the bowl with the seasoned potatoes. Toss lightly to combine.
Spread the potato and sausage mixture evenly on a large baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the potatoes are tender and starting to brown, stirring halfway through for even cooking.
Remove the baking sheet from the oven. Sprinkle the shredded cheddar cheese evenly over the potatoes and sausage. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool slightly. Garnish with chopped fresh parsley if desired. Serve with a side of sour cream for dipping or topping, if using.
