Directions:
1 In a bowl, whisk together all marinade ingredients.
2 Add chicken and coat well. Cover and marinate in the fridge for at least 2 hours (overnight is best).
3 Preheat grill or grill pan over medium-high heat.
4 Grill chicken for 5–7 minutes per side or until cooked through and charred in spots.
5 While chicken grills, make the green sauce: blend all Aji Verde ingredients in a food processor or blender until smooth.
Taste and adjust seasoning.
Serve grilled chicken hot, drizzled with green sauce or with it on the side for dipping.
