Preheat the oven to 180ºC and line a 20cm x 20cm baking dish with baking paper.
Place berries into a small saucepan and heat over medium heat, with the lid on, for 5-7 minutes or until the berries are warmed through and soft.
Remove from the heat and break the berries up slightly with a spatula or spoon then add the chia seeds and lemon juice. Mix to combine. Set aside to thicken.
Make the base layer by placing butter and sugar into a stand mixer and beat until smooth and creamy.
Add the egg and beat to combine. Add in the flours and beat until combined. Transfer to the prepared tray and spread evenly over the base of the tray.
Top with berry mixture and spread out evenly.
Place the coconut, eggs and maple syrup into a small bowl and mix well to combine. Spread evenly over the berry layer then bake for 30-35 minutes, until the top is golden brown.
Remove from the oven and allow to cool before slicing. Store in an airtight container in the fridge for 4-5 days.
