Char/roast the yellow onion and ginger knob
Add 4 quarts of water to a pot
Add the charred onion and ginger to the water
Add pho spices (star anise, cinnamon stick, cardamom pod, cloves, fennel seeds, coriander seeds) to the broth
Add 6 small pieces of rock sugar to the broth
Add 2 TBSP Knorr Chicken Powder to the broth
Add 1.5 TBSP fish sauce to the broth
Bring broth to a boil and simmer
Shred the rotisserie chicken
Cook pho noodles according to package directions
Assemble bowls with noodles and shredded chicken
Pour hot broth over noodles and chicken
Serve with chopped scallion, cilantro, thinly sliced onions, hoisin sauce, sriracha, chili oil/paste, lemon, and herbs
