Season pork chops with salt, pepper, and paprika on both sides.
Heat olive oil in a large skillet over medium-high heat.
Sear pork chops 3–4 minutes per side until golden. Remove and set aside.
In the same skillet, add pineapple chunks and cook 2 minutes.
Stir in pineapple juice, brown sugar, soy sauce, vinegar, and garlic.
Bring to a simmer, then stir in cornstarch slurry.
Return pork chops to the skillet and spoon sauce over them.
Simmer 6–8 minutes until sauce thickens and pork is cooked through.
Garnish with fresh parsley and serve hot.
