Heat oven or air fryer to 425°F.
Cut potatoes into bite-size pieces and toss with olive oil, salt, pepper and garlic powder.
Roast for 30-40 minutes, tossing halfway, until browned and crispy. In an air fryer, cook at 400°F until crisp, working in batches as needed.
Mix soy sauce, gochujang, honey, sesame oil and rice vinegar.
Brown ground beef in a large skillet over medium-high heat.
Add garlic and ginger and cook for about 30 seconds.
Pour in the gochujang sauce and cook another 2–3 minutes until the beef is coated and the sauce has thickened slightly.
Divide potatoes and beef between 8 containers.
Add cucumbers, carrots and green onions. I keep the fresh vegetables in a separate container for my wife and kids. I don’t care enough to do that for myself.
