Peel the potatoes and wash them.
Cut each potato into pieces around ¾ of an inch.
Spread the potato pieces in a baking dish.
Pour about half a cup of water over the potatoes.
Squeeze fresh lemon juice over the potatoes.
Sprinkle salt, pepper, and oregano evenly on the potatoes, then add butter on top.
Bake the potatoes at 360 degrees Fahrenheit for about an hour and a half on convection-roast setting, flipping once at the one-hour mark.
If using the regular bake setting, bake for about two hours and 15 minutes without flipping.
Check on the potatoes every 30 minutes and add more water if they look dry.
Serve warm, optionally adding more lemon or oregano on top.
