Cinnamon Crunch Banana Bread
  1. Grease your loaf tin (2lb / 9 x 5 inch) and preheat the oven to 160°C fan.

  2. Add mashed banana, melted butter, maple syrup, eggs and vanilla to a large bowl and stir until combined.

  3. Add the flour, espresso powder, baking soda and salt. Fold into the mixture — don't over-mix!

  4. Mix the cinnamon sugar ingredients together.

  5. Mix the cinnamon crunch ingredients together.

  6. Pour half of the banana bread batter into your prepared loaf tin. Sprinkle all of the cinnamon sugar on top, then about a third of the cinnamon crunch mix. Pour the remaining batter on top. Finish with the remaining cinnamon crunch.

  7. Bake for 55 minutes. Allow to cool for 30 minutes before removing from the loaf tin. Run a butter knife around the edges to loosen the banana bread from the tin.
