Potato Soup
  1. Melt the butter in a pot over medium heat.

  2. Add the onion, carrots, celery, and garlic. Cook until the vegetables have softened, about 10 minutes, stirring occasionally.

  3. Add the potatoes, season with salt and pepper, and stir to combine.

  4. Add the thyme, chili powder, and paprika. Cook for a couple minutes, stirring to prevent anything from sticking to the bottom.

  5. Pour in the broth and bring to a boil. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, stirring occasionally, until the potatoes are tender.

  6. Remove half the soup and blend until smooth. Return the blended soup to the pot and cook for 5-10 minutes on medium-low, uncovered, stirring occasionally.

  7. Stir in the heavy cream and serve.
