Gingery Chicken Noodle Soup
  1. Season chicken thighs with salt

  2. Cut scallions, slice garlic, slice ginger, slice carrots, and cut lime

  3. Heat oil over medium heat, add scallion batons, ginger, garlic, and salt and sauté for 4–6 minutes

  4. Add curry powder and black pepper

  5. Add broth and water and bring to a boil

  6. Add chicken thighs and simmer until cooked through, 18–22 minutes

  7. Remove chicken from broth

  8. Add carrots and cook 3–4 minutes

  9. Add noodles and scallion batons and cook until just tender

  10. Shred chicken

  11. Squeeze lime juice into broth

  12. Plate, top with black pepper, and serve with lime wedge
