Add the pistachios to a high-speed blender and blitz until very finely ground
Melt the chocolate over a bain marie
Add the drained tofu, melted chocolate, sweetener of choice, and a pinch of salt to the blender
Blend until completely smooth, scraping down the sides as needed
Taste and sweeten to your preference
Spoon into 4 small pots
Chill for 3 hours or overnight until the texture is like thick yoghurt
Finish with chopped pistachios and store for 7 days
