Slice the chicken thighs lengthwise into thinner pieces.
Place in a bowl, add the marinade ingredients, and leave for a short while.
Coat the chicken with potato starch and fry in a little extra oil over medium heat.
Place all the chicken in the pan before turning on the heat.
Mix the sauce ingredients together.
Once both sides are golden brown and the chicken is cooked through, remove any excess oil and add the sauce.
Toss the chicken in the sauce until well coated.
Let the sauce reduce slightly, then turn off the heat and finish with plenty of black pepper.
