2️⃣ Cook the fruit: Add pineapple, jalapeños, sugar, lime juice, lime zest, apple cider vinegar, honey, salt, and crushed red pepper flakes to a medium saucepan.
3️⃣ Simmer the jam: Cook over medium heat, stirring often, until the sugar dissolves and the mixture starts bubbling.
4️⃣ Thicken: Reduce heat to medium-low and simmer for 20–25 minutes, stirring frequently, until glossy and thickened. Mash the fruit slightly as it cooks.
5️⃣ Optional pectin step: For a thicker, more classic jam texture, stir in powdered pectin during the last 5 minutes of cooking. Keep stirring until the jam looks shiny and slightly gelled.
6️⃣ Test the texture: Spoon a small amount onto a cold plate. Let it sit for 1 minute. If it wrinkles slightly when pushed, it is ready. If it is too loose, simmer a few more minutes.
7️⃣ Cool and store: Transfer to a clean jar and let cool. Cover and refrigerate.
