  1. Bring 2 quarts of water to a boil

  2. Heat chicken fat or neutral oil in a pot

  3. Peel and thinly slice half a carrot

  4. Thinly slice half an onion

  5. Smash 2 cloves of garlic

  6. Add the carrot, onion, and garlic to the hot oil and sweat until they get some color

  7. Strip the meat off the rotisserie chicken carcass and shred it to remove the diffusion barrier

  8. Add the shredded chicken meat to the pot

  9. Add the boiling water to the pot

  10. Seal the pressure cooker lid and bring the Instant Pot up to pressure

  11. Cook at pressure for 40 minutes

  12. Allow the pressure cooker to cool down or slowly release pressure
