Bring 2 quarts of water to a boil
Heat chicken fat or neutral oil in a pot
Peel and thinly slice half a carrot
Thinly slice half an onion
Smash 2 cloves of garlic
Add the carrot, onion, and garlic to the hot oil and sweat until they get some color
Strip the meat off the rotisserie chicken carcass and shred it to remove the diffusion barrier
Add the shredded chicken meat to the pot
Add the boiling water to the pot
Seal the pressure cooker lid and bring the Instant Pot up to pressure
Cook at pressure for 40 minutes
Allow the pressure cooker to cool down or slowly release pressure
Strain and serve
