For the sausage mixture, combine all the ingredients above into a homogeneous consistency.
Separate into 8 eagle balls and place each one on flour tortilla
Using a spatula, spread the sausage mixture evenly over one of the tortillas
Add to a medium high skillet meat side down
Add some of the grated mozzarella cheese on top, followed by another flour tortilla. Press it down and cook for about 3 minutes
Add some of the softened butter, grated parmesan, and some parsley and flip it over to fry the other side (make sure to evenly separate the parmesan, parsley, and butter for 7 remaining tacos)
Flip over the taco and add a slice of mozzarella
Fill the taco with some of the pasta and garnish with parmesan and parsley
