Watermelon Caprese Salad
  1. Stir 4 ounces mozzarella, ¼ teaspoon salt and ¼ teaspoon pepper together in a medium bowl.

  2. Add 4 cups watermelon and ¼ cup basil; toss to combine.

  3. Drizzle with 1 tablespoon balsamic vinegar (or glaze) and 1 tablespoon olive oil (if desired).
