Leah's meat & Broccoli Stir-fry
  1. Prepare the chicken marinade by combining the chicken, soy sauce, Shaoxing wine, salt, baking soda, and neutral oil. Mix well and set aside.

  2. Make the sauce by combining the water, soy sauce, sugar, dark soy sauce, oyster sauce, Shaoxing wine, rice vinegar, and sesame oil. In a separate small bowl, make a slurry by mixing the cornstarch and cold water.

  3. Heat a large skillet or wok over high heat. Add the 3 Tbsp of neutral oil. Once the oil is hot, add the marinated chicken and stir-fry until cooked through, about 5-7 minutes.

  4. Add the blanched broccoli, minced ginger, and minced garlic. Stir-fry for 2-3 minutes.

  5. Pour in the sauce and bring to a simmer. Slowly pour in the cornstarch slurry while stirring constantly to thicken the sauce, about 1-2 minutes.

  6. Remove from heat and stir in the scallions. Garnish with sesame seeds and serve with chili crisp on the side, if desired.
