Finely slice the cucumber
Dice half a small red onion
Mince or prepare fresh garlic
Combine greek yoghurt with minced garlic, lemon juice, and olive oil
Season the yoghurt mixture with salt and pepper
Add lemon zest if desired
Layer the sliced cucumber and diced red onion in a container
Top with cooked chicken breast
Add the yoghurt dressing
Prepare the night before and refrigerate until ready to eat
