Preheat your oven to 375°F (190°C).
Spread the bell pepper, spinach, green onions, and mushrooms on a baking sheet. Roast them in the oven for 10-15 minutes to remove excess moisture.
In a large bowl, whisk the eggs, cottage cheese, and Colby Jack cheese. Add salt and pepper to taste.
Once the veggies are roasted, spread them evenly in a greased baking dish.
Pour the egg and cheese mixture over the veggies.
Bake for 40 minutes or until the frittata is golden brown and set in the middle.
Let it cool slightly, slice into four servings, and enjoy!
