Cook rice.
In ovenproof 10 inch skillet, heat oil over medium heat. Cook carrots and onions for three minutes. Add beef [or lentils] and cook for about five more minutes, until browned. Drain off fat.
Stir in vegetable stock, tomato paste, Worcestershire sauce, salt, and pepper to taste.
Add peas, cook for one more minute. Spread evenly in pan.
Start together, cooked rice, egg, cheese, and sour cream. Spread evenly over beef or lentil mixture.
Broil for seven minutes or until rice is heated through.
