Beef: Ribeye with Garlic Cream Sauce

  1. Heat a large skillet over medium-high heat and add olive oil.

  2. Season the steaks generously with salt and pepper on both sides.

  3. Sear the steaks in the skillet for 3-4 minutes per side for medium-rare or longer for your preferred doneness.

  4. Remove steaks from the skillet and set aside to rest.

  5. Lower the heat to medium, and in the same skillet, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.

  6. Stir in heavy cream, Parmesan cheese, Dijon mustard, and dried thyme. Simmer for 3-5 minutes, or until the sauce thickens slightly.

  7. Adjust the seasoning with salt and pepper as needed.

  8. Return the steaks to the skillet, spooning the garlic cream sauce over them. Cook for an additional minute to combine the flavors.

  9. Garnish with fresh parsley and serve immediately with your favorite sides.
