Spatchcock the whole chicken
Mix together soy sauce, oyster sauce, dark soy sauce, honey, white pepper, and five spice to create the marinade
Add spring onion and fresh ginger slices to the marinade
Coat the spatchcocked chicken thoroughly with the marinade
Let the chicken sit overnight in the marinade, or for the full 24 hours if time allows
Brush the chicken with garlic oil before roasting
Roast the chicken until cooked through
Prepare ginger scallion sauce to serve alongside the chicken
