Preheat oven to 450°.
Sift into a large bowl: flour, salt, baking powder, sugar, and baking soda.
Using a pastry blender or two knives, cut in chilled shortening until it resembles coarse cornmeal.
Stir in buttermilk.
Once the buttermilk is mostly incorporated, quickly beat it for half a minute until mixed.
Turn out onto a lightly floured board and knead for no more than another 30 seconds.
Roll or pat out to a thickness of ½".
Using a 2" biscuit cutter dipped in flour, cut out biscuits making sure to go straight down while cutting.
Place biscuits a couple of inches apart if using a cookie sheet, or barely touching if using an 8" cake pan.
Bake for 9 - 12 minutes, or until tops and bottoms are lightly browned.
