Combine chopped prawns, pork mince, chopped scallions, potato starch, oyster sauce, sesame oil, and white pepper
Stir thoroughly in one direction until sticky
Whisk eggs with water and salt to combine
Layer leftover rice, pork and prawn mixture, and egg mixture into vessel
Optionally use a blow torch to remove bubbles
Steam covered on medium low for 15 minutes
Finish with chopped scallions, a drizzle of hot neutral oil, and premium soy sauce
