  1. Heat the milk to 195°F (91°C).

  2. Add the citric acid or lemon juice and stir until the milk curdles and separates into curds and whey.

  3. Drain the curds in a colander and rinse with cold water.

  4. Knead the curds until they become smooth and elastic.

  5. Add salt to taste.
