Mix together 2 lbs lean ground beef, ½ cup bread crumbs, ½ cup grated Parmesan, 2 eggs, 2 tbsp chopped garlic, ¼ cup caramelized onions, and 2 tbsp soy sauce
Season meatloaf mixture with salt and pepper
Bake meatloaf at 375°F for 50 minutes
For the sauce: sauté 7 medium chopped onions until caramelized
Add 1 tbsp chopped garlic, 1-2 tbsp flour, 16 oz beef bone broth, and 1 tbsp Worcestershire sauce to the onions
Season sauce to taste with salt and pepper
For mashed potatoes: prepare 2 bags +Protein Idahoan Mashed Potatoes with 4 cups ultrafiltered milk instead of water
Mix in 1 cup low fat cottage cheese to the mashed potatoes
Slice meatloaf into 7 slices (2 inches thick) and serve with ½ cup mashed potatoes and ⅓ cup French onion sauce per slice
