One-pot Chile-ginger Chicken And Rice
  1. Stir chicken stock, ginger, garlic, and chile together in 3 ½-quart dutch oven or another deep pan with high sides.

  2. Bring to a boil over medium heat, then add rice and stir.

  3. Bring again to a boil, then add chicken and season with salt and pepper.

  4. Cover, turn heat down to low, and cook 20 minutes.

  5. At this point, rice should have absorbed all liquid and chicken should be tender.

  6. Top with scallions and cilantro.

  7. Serve with coconut aminos on the side.
