Steamed Fish The Japanese Way With Yuzu Ponzu Dressing
  1. Season the salmon with salt and pepper.

  2. Parcel the salmon in parchment paper, placing the mushrooms and butter on top.

  3. Use a steamer or wok with shallow simmering water at the bottom and a raised platform for the fish. Cover with a lid.

  4. Steam the fish for 5 minutes, then switch off the heat and let it cook in the residual heat while plating up.

  5. Prepare the yuzu ponzu dressing by combining the yuzu juice, soy sauce, mirin, rice vinegar, and honey (and kombu if using) in a jar.

  6. Optionally, top the dish with finely chopped spring onion.

  7. Serve the steamed fish with the yuzu ponzu dressing, rice, and miso soup.
