Remove skin from store bought chicken and pat dry with paper towel.
Shred breast meat and set aside.
Add dried vermicelli noodles to a heatproof bowl. Pour boiling water over the noodles and allow to soak for five minutes or until softened. Drain them well.
To a serving bowl add coleslaw, cooked noddles and chicken.
Add sliced spring onions and sliced mint.
Combine all the dressing ingredients in a bowl or jar and pour that over the salad. Taste and adjust to your liking. Toss to coat salad well.
Add toppings like fried shallots, crushed peanuts or fresh chilli and enjoy!
