Mary Berry Banana And Walnut Loaf
  1. Preheat the oven to 160C/140C Fan/Gas 3. Grease a 450g/1lb loaf tin with some butter and line the base with baking parchment, then grease this as well.

  2. Mash the peeled banana in a mixing bowl. Add the milk, butter, sugar, egg, flour, bicarbonate of soda, and baking powder, and beat until combined and smooth. Stir in the chocolate chips and spoon the mixture into the prepared loaf tin. Level the top.

  3. Bake the cake for 40 to 45 minutes, or until well risen, shrinking away from the sides of the tin, and golden brown. A skewer inserted into the center should come out clean. Let it cool for 10 minutes, then remove from the tin and cool completely on a wire rack.

  4. Optional: Melt the dark chocolate for decoration. Spoon the melted chocolate into a piping bag and pipe zig-zags across the top of the loaf. Allow the chocolate to set.
