Pad Kra Pao (Thai Basil Tofu)

  1. Soak your sticky rice and then cooking to packet instructions.

  2. Next crumble up your firm tofu, drizzle in oil and season. Add to some baking paper and wack in the oven/air fryer for 10/15 mins at 200C or until your desired crispiness.

  3. Whilst that’s crisping up, chop up all your aromatics and grab a wok. Add some oil and fry them off, leaving the basil till last.

  4. Add in the crispy tofu mince and then the soy sauce and maple syrup. You can add sriracha now if you like it extra hot. Turn off the heat and stir through the basil.

  5. Serve up your sticky rice, top with sesame seeds and then serve up the Thai basil tofu and enjoy!
