Gingery Spring Soup
  1. Broil/roast veggies and mushrooms with touch of olive oil, salt, and pepper for 4-8 minutes.

  2. Heat stock, white scallions, ginger, bouillon, and edamame. Boil 2 minutes.

  3. Add tofu to the broth.

  4. Add roasted veggies and finish with soy sauce to taste.

  5. Top with green scallions before serving.
