In a large bowl, combine all dough ingredients. Knead until a ball of dough forms.
Adjust consistency: If too sticky, add flour (1 tablespoon at a time); if dry, add water (1 to 2 tablespoons).
Divide dough into thirds. Roll out one portion on a lightly floured surface into an oval shape.
Spread chosen filling evenly on the rolled-out dough.
Roll the dough from the closest side into a log shape.
Line a baking sheet with parchment paper. Place the log on top.
Repeat rolling and filling for the remaining two portions of dough.
Using a knife or bench scraper, score the logs into cookies about 1 inch thick.
Bake in a preheated oven at 350°F for approximately 30 minutes.
Once cookies are completely cooled, generously dust with powdered sugar. Cut through the dough on your previous cuts to ensure no crumbling.
