Heat vegetable oil in a large pot or Dutch oven over medium-high heat.
Season the chicken well, drizzle with olive oil, then sear on both sides until golden brown. Remove the chicken and set aside.
In the same pot, add a bit more oil if needed and sauté the aromatics until fragrant, about 1-2 minutes.
Add the jasmine rice to the pot and stir to coat with the aromatics mixture.
Pour in the coconut milk, chicken broth, soy sauce, and brown sugar. Stir to combine. Add in the butter.
Nestle the seared chicken pieces back into the pot, ensuring they are partially submerged in the liquid.
Bring the mixture to a slight simmer then turn off the heat and remove from the stove.
Cover the pot and finish cooking in the oven at 375°F for another 35-45 minutes.
Remove from the oven and serve.
