Greek Feta Roasted Potatoes
  1. Preheat oven to 400°F (200°C).

  2. Toss potatoes with olive oil, oregano, garlic, salt, and pepper.

  3. Spread on a baking sheet, cut-side down. Roast 35-40 minutes until golden.

  4. Squeeze lemon juice over the hot potatoes.

  5. Sprinkle crumbled feta and chopped parsley on top.

  6. Serve hot with extra lemon if desired.
